Lords Of The Ribs is a professional BBQ team from Quebec that competes in Kansas City Barbeque Society sanctioned competitions. In just three short years, Benoit Lord went from getting his first grill and smoker to winning an amateur backyard BBQ competition to forming a professional team.
BBQ competitions are serious stuff - teams are required to install all of their own equipment (tents, tables, BBQs, and smokers) and continuously produce their own hot water. They then have to prepare chicken, pork ribs, pork shoulder, and beef brisket. Beef brisket can take up to 12 hours to cook, so the team has to begin cooking in the middle of the night in order to serve the judges on a precise schedule the next day. Each meat serving must be presented within a specific 10 minute window - a big challenge given that cooking time in smokers is not as accurate as in your standard oven!
During all this preparation time, Lords of the Ribs wear their S&R aprons. The aprons keep them clean while handling meats during cooking, and allow the team to carry their thermometers and cell phones at all times. Benoit also notes that X-back straps allow them to wear their aprons comfortably all day.
