Sebastian & Co. Fine Meats opened its first location in Vancouver in 2007.  Owner Sebastian Cortez is a chef-turned-butcher and takes his inspiration from the artisan butcher shops of Europe.  There are now two locations, in West Van and downtown Vancouver, the latter of which has a custom dry aging room, the first of its kind in Canada.  Customers can specify exactly how long they want their loins or ribs aged for, and Sebastian and his team are there to offer expert advice and cooking tips.

Not only do they have super high quality meats, they also have a huge variety of it.  If you're feeling adventurous, they can source kangaroo, ostrich, elk, wild boar and more.  And if you're looking for something even more rare (meat pun!), they'll do their best to get it for you!
