Quality, precision, creativity, beauty. These are all words you’d associate with a baker and chocolatier. They make total sense describing the work of someone who makes delicious and gorgeous confections! But when it comes to the newest S&R Ambassador, T Lawrence-Simon, these words describe not only his work with food but also his passion for aerial circus performance. At first glance, these two areas of expertise may not seem to be related, but Chef T is an expert at both!
T has had a career as a performer and aerial circus coach since 2008. More recently, he became a casual home baker, working with pastry and the French Patisserie methods. Not long after starting to share his desserts on social media (he's @cirquedusouffle on Instagram), he was scouted for the first season of Great Chocolate Showdown on Food Network Canada, where he made it all the way to the finals. It's not surprising he did so well when you see the kinds of things he makes!
Since the show’s filming, T’s success has soared to new heights. He launched a chocolate and baking business, Cirque du Souffle, where he creates custom confections for locals in Somerville, Massachusetts while also shipping thousands of chocolate bars and bonbons all over North America. He was a featured presenter at the 2020 Pastry Arts Virtual Summit, joined the teaching staff at Ecole Chocolat, and has upcoming projects in the works! All this while still working as an aerial circus performer and Senior Coach at Esh Circus Arts. What a talented artist - we couldn’t be happier to have him as our newest Ambassador.
